I have an addiction to Pinterest, but who doesn’t? My problem is that I actually love trying the things I pin—some victories and even more failures. Here is one of my victories: Refrigerator Dill Pickles. I recently gained a few last-of-the-season pickling cucumbers and wanted to try my hand at pickles. I scoured Pinterest for a few recipes and selected one that looked promising. With the ingredient list in hand, I headed to the grocery store to gather the few supplies.
The ingredients are far from expensive and luckily this is an easy recipe to follow. You should check out The Prudent Garden and look at her pictures; mine do not begin to compare. I adapted the recipe for 2 pint jars instead of 3—I did say that they were the last few of the season.
If you have never pickled anything before, this will make you feel like an expert! I didn’t realize how easy it was to make pickles. My husband had not seen them made either and was intrigued by the process and amazed by the simplicity (he is great in the kitchen, and we often cook side by side). He was my taste tester and eventually gave the approval as he likes pickles way more than I do.
Once clean, washed and organized in the jars, the pickles must remain in the fridge for at least 48 hours to marinate before eating. We tried them after 72 hours at the first football tailgate of the season. And the verdict is…
Success! I loved the slight flavor from the jalapeño along with the fresh crunch of each bite. My husband wants to know where we can get a few more cucumbers to make another batch so we’ll be keeping a look out for them. I will definitely keep this recipe in my box.
